Harvest : Manual for a better selection of grapes; use of trays to avoid crushing and oxidation of the berries. Sorting on table and after destemmer.

VINIFICATION

Maceration :  Long maceration with manual punching down.
Fermentation : temperature control.
Ageing :  In stainless steel vats.

THE TASTING

Colour :  Deep red.
Nose :  Notes of black fruits and spices.
Palate :  The palate is ample.
Fruits and spices mingle, the fresh finish evokes the gunflint characteristic of schist.
